Do you have 8 pounds of salt per person in your home storage?

The virtues -- and ease -- of storing essential foods is a particularly important and timely consideration in this time of economic uncertainty. Washington Post writer Lois M. Baron explains how it's done and includes a timeless reminder that each family should be storing eight pounds of salt for each family member.

Salt in food storage

Salt stores very well. Besides canning it, you can use a garbage can placed on wooden 2 X 4s so it isn't directly on cement. Put a 2-3 inch layer of rock salt in the bottom for dryness and a hefty handful of bay leaves as rodents don't like the smell. Thus prepared, you can place dry goods on top: salt, pasta, rice, cake mixes, etc.

Iodized salt is known to maintain its iodination for up to a decade and possibly beyond that time with minimal loss. It is my personal opinion to store at least ten pounds of NaCl per person per year as there are 14,000 uses, including some of the following areas: cleaning, laundry, health and beauty aids.
