Salt Institute Endorses Improving Dietary Quality 

Alexandria, VA (Jan. 12)…. “The Dietary Guidelines announced today have endorsed the DASH Diet, a sound recognition of the need to improve mineral nutrition and overcome nutrient deficiencies in the American diet,” the Salt Institute responded to release today of the 2005 Dietary Guidelines for Americans.  The Institute represents America’s salt producers.

The Salt Institute endorsed the DASH Diet back in 1997 when the Dietary Approaches to Stop Hypertension study was published.  The DASH Diet includes increased intakes of fruits, vegetables and dairy products; the DASH study protocol held dietary salt constant. 

“As an essential nutrient and a ubiquitous food ingredient, salt contributes to good health and the enjoyment of eating,” explained Salt Institute president Richard L. Hanneman.   “Still, a ‘pinch of salt’ is often enough; even too much of a good thing should be avoided, though we disagree that a single target intake level is appropriate for all individuals.”  Hanneman continued:  “We are pleased that the new Guidelines focus on the overall quality and quantity of the diet.  Concerns about ‘too much’ salt disappear when people eat the recommended amounts of calcium, potassium and magnesium – the key nutrients in the DASH Diet.  This advice can improve the health of every American, whether or not they eat ‘little salt.’”
